This 210 mm Gyuto features the same high-performance blade as the classic DP series but upgrades the construction to a fully integrated, all-stainless steel design. The 210 mm length is the standard size for most chefs, offering enough reach for slicing large proteins while remaining nimble enough for precision vegetable work.
Engineered for Sanitation and Grip
The blade utilizes a VG10 (Cobalt Alloy) Core, clad in 13-Chrome Stainless Steel, ensuring razor-sharp performance and excellent edge retention. The handle is crafted from 18-8 Stainless Steel in a "monocoque" (hollow) construction, which significantly reduces weight to prevent wrist fatigue. It features Tojiro's signature "Tornado" pattern—ridged grooves that ensure a secure, non-slip grip even when hands are wet or oily. The seamless integration of blade and handle eliminates crevices where bacteria can grow, making it easy to sterilize.
