Whether your KitchenAid stand mixer is old or new, these pasta-making attachments are designed to fit every model. Simply connect your chosen tool to the multipurpose attachment hub and let the mixer turn the rollers, leaving both hands free to guide and support the dough.
The set includes a pasta sheet roller, a spaghetti cutter and a fettuccine cutter. Roll your dough to the desired thickness first, then replace the roller with your chosen cutter to create neat, consistent strands.
Get Ready to Roll
Forget the rolling pin and take the physical effort out of preparing pasta sheets. The stainless steel roller produces sheets up to 14 cm wide and offers eight thickness settings, giving you control from the first kneading passes to the final delicate sheet.
Divide rested pasta dough into manageable pieces, flatten each one by hand and sprinkle it lightly with flour to prevent sticking. Attach the roller, set the mixer to speed 2 and begin with setting 1. Fold and pass the dough through repeatedly until it becomes smooth, then move gradually through the settings until you reach the thickness your recipe requires.
Use the finished sheets for lasagne, or shape them by hand into filled pasta such as ravioli and tortellini. Beautifully even dough is ready without reaching for a manual rolling pin or turning a hand crank.
Cut Pasta Like a Professional
Once your pasta sheets are smooth and evenly rolled, it is time to cut. Choose the required cutter, secure it in the attachment hub and guide each sheet gently through the rollers.
The fettuccine cutter produces substantial 6.5 mm ribbons suited to fettuccine and egg noodles; use it with the mixer at speed 5. The spaghetti cutter creates slender 2 mm strands for spaghetti, thin fettuccine or linguine fini and is designed for use at speed 7.
Catch the strands as they emerge and arrange them loosely or hang them briefly to keep them separated. Cook the pasta fresh, or follow suitable refrigeration or freezing guidance if saving it for another meal.

Care for Your Pasta Attachments
The roller and cutters must not be immersed in water or placed in the dishwasher. After use, allow any remaining dough to air-dry inside the attachments for approximately one hour, then remove it with the included cleaning brush. Gently tapping the housing can help loosen stubborn pieces; use a toothpick if necessary, but never insert a knife or another sharp object.
Finish by wiping the exterior with a soft, dry cloth and store each attachment in a dry place at room temperature. Do not pass a cloth or tea towel through the rollers.
For periodic maintenance, apply one drop of light mineral oil to each of the four far corners of the roller or cutter gears. This can be done approximately once a year or after every 50 uses to help keep the attachments moving smoothly for many batches to come.
