Elegant Utility: The Tojiro Shippu Black Petty
For intricate tasks that require more board clearance than a paring knife but less bulk than a chef's knife, the Tojiro Shippu Black Petty (FD-1592) is the ideal "bridge" tool. Known in Japan as a "Petty" (from the French petit), this 130 mm utility knife is designed for peeling, trimming, and small-scale chopping tasks like mincing garlic, slicing shallots, or segmenting fruit. The "Shippu Black" series enhances this versatile profile with a stunning dark aesthetic, merging high-performance metallurgy with traditional Japanese craftsmanship.
Engineered for Precision and Style
The blade utilizes a VG10 (Cobalt Alloy) Core for superior edge retention, clad in Damascus Steel layers. The distinctive black finish is created through an oxidation process that reveals the intricate "Kasumi" ripple pattern while improving corrosion resistance and reducing food friction. The handle is crafted from Chestnut Wood that has been surface-burned (Yakisugi), a technique that improves durability and water resistance while providing a warm, tactile grip. A sleek Polypropylene Resin Collar connects the blade to the handle, ensuring a lightweight and hygienic build.
